Position Overview
We are seeking a dynamic and experienced Sous Chef to lead multiple key stations in our Main Galley. This role includes the responsibilities of :
- Sous Chef Saucier : Overseeing the creation of sauces and accompaniments with precision and classical French techniques.
- Sous Chef Fish Preparation : Managing the art of fish preparation, ensuring the highest standards of quality and presentation.
- Deputy Chief Guard Eating : Directing the cold station, with expertise in charcuterie, salads, and other intricate preparations.
You will BE responsible for managing these critical areas, ensuring each station delivers consist excellence to our onboard dining outlets. Reporting to the Senior Sous Chef, you will also supervise junior chefs and collaborate closely with other sections to maintain a seamless culinary operation.
Key Responsibilities
- Leadership & Management :
- Supervises the daily operations of the sauce, fish, and pantry stations.
- Provide mentorship and guidance to junior team members, ensuring proper training and development.
- Quality Assurance :
- Maintain rigorous standards in food preparation, presentation, and sanitation across all stations.
- Execute classical techniques, particularly in French cuisine, to deliver exceptional culinary experiences.
- Collaboration & Efficiency :
- Coordinate with other sections of the galley for synchronized, high-volume service.
- Overdue proper implementation and efficient workflow to support onboard dining operations.
- Compliance & Safety :
- Adhere to all food hygiene, sanitation, and public health standards.
- Follow the company's SMS, STCW, MLC, USPHS, and environmental protocols diligently.
Requirements
- Availability : Must BE ready to join as soon as possible.
- Certifications : Valid STCW certificates, C1/D visa, Seaman's Book, and Medical Exam.
- Professional Training : Certified Culinary Diploma or equivalent professional training.
- Experience :
- Minimum of 3 years' experience as a Sous Chef in a luxury cruise line, 5-star hotel, or fine-dining restaurant environment.
- Proven proficiency in French cuisine and classical culinary techniques.
- Experience in managing multiple stations in a high-pressure environment is highly valued.
- Language & Communication :
- Strong spoken English (minimum 70% score in onboard language test).
- Excellent organizational, leadership, and team communication skills.
- Personal Attributes :
- High levels of stamina, flexibility, and professionalism.
- A proactive attitude and passion for culinary excellence.
